These patties add a little spice to any meal. Try to use fresh herbs only, as they make the patties taste really good!

Weight Watchers Spicy Turkey Patties recipe
Makes 8 patties

Ingredients
2 lbs ground turkey
1 egg
1 1/2 cups finely torn fresh bread
1/2 cup plain yogurt
2 cloves garlic, minced
1/4 cup yellow onion
1 tablespoon finely chopped fresh basil
1 tablespoon finely chopped fresh parsley
1 tablespoon finely chopped fresh rosemary
1 tablespoon finely chopped fresh thyme
cooking oil
3 dashes hot sauce (or less if you prefer the patties milder)
1/2 teaspoon salt
1/4 teaspoon pepper
bottled chutney (optional)

Preparation
1. Combine all the ingredients and mix well.
2. Form 8 patties.
3. Heat the cooking oil in a large nonstick skillet over medium-high heat.
4. Add 4 patties at a time and cook for about 4 minutes (or until cooked through) on each side.
5. Drain the patties on paper towels.
6. Repeat with the remaining half, adding more oil if necessary.
7. Serve with mango chutney (optional).

Now that the weather is starting to get hot, all I feel like eating is fruit. But even with its great taste, fresh fruit can sometimes get boring if eaten by itself. Beautiful, delicious and very refreshing, this salad makes fruit look as exciting as it tastes!

Weight Watchers Layered Fruit Salad recipe
Makes 6 servings

Ingredients
2 medium bananas, sliced
2 cups pineapple chunks
2 medium oranges, peeled and sectioned
2 kiwi fruit, peeled and sliced
1 cup red seedless grapes
1 pint strawberries, sliced
1 medium grapefruit, peeled and sectioned
1/2 cup orange juice
1/2 teaspoon orange zest
1/4 cup lemon juice
1/4 cup packed brown sugar
1/2 teaspoon grated lemon, rind of
1 cinnamon stick

Preparation
1.In a medium saucepan, combine the orange juice and zest, lemon juice and rind, brown sugar and cinnamon stick. Bring to a boil.
2. Reduce the heat and simmer, uncovered, for about 5 minutes.
3. Remove from the heat and let cool completely.
4. Layer the fruit in a glass serving bowl.
5. Remove the cinnamon stick from the sauce; pour the sauce over the fruit.
6. Cover and chill for several hours before serving.

I don't like onions, but I got a request for a sweet onion recipe, so here's a very rich French soup for you!

Weight Watchers Roasted Vidalia Onion and Garlic Soup recipe
Makes 12 servings

Ingredients
6 medium sweet Vidalia onions
1 head garlic, bulb cut in 1/2
2 quarts low sodium chicken stock
2 celery ribs, chopped
2 leeks (white part only), soaked and chopped
1 tablespoon canola oil
1 cup cream
1/2 cup sweet sherry
2 tablespoons fresh thyme, finely chopped
salt and pepper, to taste
1 bunch fresh parsley (to garnish)
1 bunch fresh chives (to garnish)

Preparation
1. Wrap each onion and garlic separately in aluminum foil and place in a 300 degree F oven for about 1 1/2 - 2 hours (until the onions feel tender all the way through).
2. Heat the canola oil in a large pot. Add the celery and leeks; cook until softened but not browned.
3. Remove the onions from the foil and skins, quarter and add to the pot.
4. Squeeze out the garlic from the skins and add to the pot.
5. Add the chicken stock and sherry; simmer for about 45 minutes.
6. Stir in the cream and thyme. Remove from the heat.
7. In batches, puree the mixture in a blender until smooth.
8. Add salt and pepper to taste. Garnish each serving with parsley and chives.

This delicious mushroom salad gets its great taste from the fabulous blend of herbs. One of my all-time favorite salad recipes!

Weight Watchers Greek Mushroom Salad recipe
Makes 6 servings

Ingredients
1/2 lb mushrooms
1 medium tomato, diced
3 garlic cloves, finely chopped
1 tablespoon olive oil
1 teaspoon basil or marjoram
1 tablespoon fresh parsley or fresh coriander, chopped
3 tablespoons lemon juice
1 pinch salt
1 pinch fresh pepper, ground
1/3 cup water

Preparation
1. In a frying pan, heat the oil on low heat and gently fry the mushrooms for about 2-3 minutes (do not overcook!).
2. Sprinkle in the garlic and basil, then toss the mixture for a minute or two so that mushrooms are well coated.
3. Add the diced tomato, lemon juice, salt, pepper and water.
4. Stir together and cook until the tomato softens.
5. Remove from the heat and let cool at room temperature for about 1-2 hours (so the flavors blend together).
6. Garnish with chopped herbs.

One serving is approximately 90 grams.
